It is not known for certain where the brushwood was first prepared (it is called differently "Sochny" or "Land"), but we can say that the recipe appeared back in the Middle Ages and was popular at monasteries.
In Russia, the delicacy was recognized in the XIX - early XX, as an unpretentious and quickly cooked dish. In times of a general shortage in the vast expanses of the Soviet Union, firewood was prepared in every family - a budget dish, quickly and easily cooked. 10. Classic brushwood
Classic recipe very simple. Our grandmothers also prepared a crumbly dessert according to it. We will use vodka - it is she who creates the effect of crunch and airiness.
Take a bowl, mix 2 eggs in it with 2 tbsp. tablespoons of vodka, salt and sugar (just a pinch of salt is needed, and it is better to take more sugar - 2 tbsp. tablespoons).
Beat the mass - when it turns slightly white, then it's time to pour flour. First, knead the dough with a spoon, and then, as is customary, transfer it to the table (or to the cutting board) and continue to knead.
We roll the ball from the dough and put it in the cold for 30-40 minutes. We take out the dough and roll it (into a thinner layer). We cut it into long strips of the same size (about 5 cm each), and then cut the ribbons into 3 parts across - in the “shreds” we create longitudinal cuts, we make one end in them.
Now the most important thing remains - to fry our twigs. We spread them in oil (preheated) and fry for half a minute on each side. You will see how the dough starts to grow and bubble - this is the most long-awaited moment for many!
Useful advice: Serve the dish with powdered sugar.
9. Aerial brushwood
This recipe differs from the previous composition. In addition to the main ingredients, it includes margarine and vanillin. We suggest you keep the recipe - you will surprise your loved ones with it!
We combine flour - 350 g with margarine - 50 g. We chop everything together and for now leave it, taking up other products. Beat 2 eggs in a bowl, pour sugar into it - 50 g.
Beat the mass, combine it with the dough and pour 10 ml. vinegar (usually take tableware). Knead the dough so that bubbles appear.
So, the dough is ready, what will we do next? And then we will form our twigs! We roll out the dough on the table and cut it into stripes (about 3 cm wide). In the middle we make a small incision - we will thread one end of the strip into it. Immediately lower air brush in deep fat (it is desirable that they float freely in it).
Useful advice: when serving, do not forget to sprinkle cookies with powdered sugar, as well as vanilla sugar - for taste.
8. Openwork brushwood
You haven’t tried such brushwood yet! Tasty, unusual and beautiful! You do not need any skills to cook it, just get a form for openwork brushwood. It can be from butterflies, flowers or leaves - choose what you like best.
First, prepare the dough. To do this, combine 1 egg with soda - 1 teaspoon, and add salt - 1 teaspoon and sugar - 2 tbsp. spoons. In the same mass add vanilla sugar - 1 teaspoon. Knead the dough, gradually pouring water - 150 ml.
It is important to get rid of all the lumps. Pour in 50 ml. vodka and do not stop interfering. The dough should be liquid, like sour cream. Now let's take the next step. We heat the oil in a cauldron - 300 ml, and then lower the mold into it - let it warm up a little.
Now we will do an interesting manipulation - we dip a hot mold into the dough, but in such a way that its tip remains on the surface. We keep it in the test for a couple of seconds, and then dip it in hot oil. Soon the dough will come loose from the mold - after that we fry the twig for 1 minute. We do the required number of times (depending on how many cookies are planned).
7. Brush on milk
In milk not only pancakes, but also brushwood turn out tasty. Although it will need very little for the dish - it still gives the liver a delicate taste.
We take any bowl and mix in it 2 eggs with warm milk - from 3 tbsp. spoons. Whisk. In another bowl, mix the flour - 1.5 stacks. with 0.5 tsp of salt and sugar - 3 tbsp. spoons.
If you wish, you can add a pinch of vanilla to the flour, but do not be surprised if the household comes to your kitchen with the question: “Will it be ready soon ?!”, because fragrant vanilla will fill the whole house with an unsurpassed aroma and make you want to taste dessert as soon as possible.
Pour the milk-egg mixture into the dough, then knead the dough. Roll out thin layers of it, each of which is cut into small squares (about 5-7 cm). In each square we make small cuts - we pass one of the ends of the square through the cut.
Fry cookies in a deep fat fryer until golden. The main thing is that they "float" in oil. When the cookie is fried, you just have to lay it in an attractive plate, sprinkle with powder and call the household to the table, delighting them with the words: “Brush is ready!”
6. Brush with olive filling
We bring to your attention an unusual dessert - brushwood with olive filling. It turns out delicious sweet flagella that perfectly complement the tea party.
We take a small bowl and mix the crumbled feta cheese in it - 250 g, 1/3 stack. finely chopped olives, 2 egg whites and 1/3 chopped parsley. Knead until smooth, and then remove to the side.
We spread the dough on the table (you yourself know that the table should be perfectly clean, as well as slightly sprinkled with flour). We roll puff pastry - 500 g into a thin layer and sprinkle it with the filling. Spread the second layer on top.
Next, we need to pin down these two layers - you can “walk” through the test with a rolling pin or come up with your own way to do it.
Lubricate the heat-resistant sheet with oil and heat the oven to 200 degrees. Let's go back to the test - we cut it into strips with a width of not more than 1.3 cm. We twist each strip into a flagellum, and then put it on a sheet, observing a distance of 3 cm from each other. Such an interesting dish is baked for 15 minutes.
5. Brushwood with sour cream
Probably everyone would like to return to their childhood for a short time ... Sometimes some personal things and smells help. If brushwood is being prepared in your family - great! Thanks to the smell of these cookies, you can recall long-forgotten emotions.
First, beat 2 eggs with 4. tbsp. tablespoons of sugar. We add a little sugar so that it does not make dough, and sweetness will be added thanks to powdered sugar.
We attach 1.5 teaspoons of baking soda to the eggs and sour cream - 200 ml. 3 stack we do not introduce flour immediately, but gradually. Knead the dough, paying attention to the fact that it should turn out soft, airy and not stick to your hands.
We roll out the layer (but not thin, as in the previous recipes, but 5 mm thick.) After cutting the dough into squares, in each middle we make an incision - through it we need to turn the tip of the dough out.
We take the dishes with a thick bottom and immerse cookies in 300 ml. hot butter. Fry until golden, turning. We serve cookies to the table with warm and sprinkled with powder.
4. Brush with cottage cheese
Cottage cheese - one of the most healthy and natural foods. Its composition is rich in protein and calcium, which is easily absorbed by the body. That is why culinary specialists love to use cottage cheese for making cottage cheese pancakes, casseroles and donuts, and we will try to cook it with brushwood.
Cooking begins with mixing products - 1 egg combined with 1/3 teaspoon of salt and 5 tbsp. Knead a packet of cottage cheese with a fork and combine with the egg. With the egg-curd mixture, mix the flour - 6 tbsp. spoons and baking powder - 1 teaspoon.
Knead the dough until an elastic mass is obtained. We roll it on the working surface, adhering to a thickness of about 5 mm. We cut the layer into beautiful rectangles and make an incision in each.
We take the edges of the dough and pass it through the hole several times. Deep-fried cookies (you can also use a deep pan of small diameter) until cooked in high-quality oil.
3. Brush from yeast dough
Yeast dough brushwood - An excellent solution, it cooks quickly and looks quite original. We ourselves will give it an interesting look - get a wooden skewer for this.
11 g of dry yeast are dissolved in water - 0.5 stack. When they are ready (that is, dissolve), add a glass of flour (a viscous slurry should form). Next, wrap the bowl with a towel and leave for 40-60 minutes, and for now we grate 1 egg with sugar - 2 teaspoons and salt - 1/3 teaspoon.
Combine the mass with the dough, mix and, adding more flour, knead the mass. We divide the dough into small pieces and make small balls out of them (the size of a ping-pong ball). We roll each of them into a thin layer and make cuts on them. We take the skewer and pass it through the cuts (then under the strip, then above it).
We spread cookies in hot oil, and in the center we hold it with a skewer, periodically moving it from side to side across the cauldron. Thus, the cookie will become like a rose. Fry until cooked.
2. Brushwood on kefir
Of course, a dessert prepared from the heart of the house is always better than the store. This treat will be the perfect complement to your meal when it is time for tea.
Ordinary flour can be replaced with corn (did you know that this is a very valuable food product? Corn flour gives dishes an unusual taste, in addition, due to the huge amount of fiber, it inhibits appetite).
The first thing we connect kefir - 0.5 l. with soda - 1 teaspoon - after it is extinguished, add the remaining components: 400 g of flour, 2 eggs, salt and sugar - a pinch.
After kneading the dough, divide it into parts. Roll them out and cut the stripes. In each middle, we make an incision (in other recipes it was previously described) and we turn one part out. If you have a frying pan with deep sides - great, you can fry cookies on it too. Fry the twigs for about 2-3 minutes in oil (remember that there should be a lot of it).
1. Honey brushwood
Want to get an excellent and fragrant dessert? Then cook honey brush - such a dish will not leave indifferent even the most fastidious person in food.
Take 5 eggs and beat them with 150 ml. water and a pinch of salt. After adding 500 g of flour, knead the dough. As in the recipes above, we roll it to a delicate state, cut out the same size diamonds from the layer (note! Not squares, but rhombs). In each of them we make incisions and beautifully arrange cookies, threading the ends of the dough into each incision. Fry cookies in a plentiful amount of oil - at least 250 ml. When serving dessert, pour honey - 200 g.
